Simple Miso Soup Recipe
Miso is a fermented soy paste, originated in Asia where, for centuries, it was believed to have healing properties. In fact, today we know this to be true. It's excellent for digestive health, heart health, and is rich in antioxidants. So, stick around to learn how to incorporate more miso in your diet.
Miso Soup Ingredients
2 cups vegetable broth (low-sodium)
2 tbsp water (filtered)
4 tbsp miso paste (vegetarian)
1 cup bok choy (chopped)
1/3 cup green onion (thinly chopped)
1 block tofu (silken, firm, cubed)
1/2 cup shiitake mushrooms ((or any type of mushrooms), raw)
Miso Soup Instructions
Bring your vegetable broth to a boil in a medium pot.
Whisk your miso paste with about 2 tbsp hot water in a small bowl, using a fork or a whisk. Let sit for a few minutes.
Add mushrooms to vegetable broth. Boil for 5-8 minutes.
Add bok choy, green onions, and tofu to vegetable broth. Cook for 5 additional minutes.
Turn off heat, and add your miso paste mixture. Mix in well, and add soy sauce or liquid aminos.
Serve, and garnish with extra sliced green onion.
TIP: It's important to turn off heat before incorporating miso paste, as cooking the miso will kill its beneficial bacteria.
