Easy Vegan Lentil Stew
If you've ever thought that the vegan diet and savory dishes don't match, we beg to differ. Vegan lentil stew is the epitome of savory, with its earthy, umami flavors and cozy feel. So, snuggle up in your couch with your favorite show and a bowl of this delicious recipe, and enjoy!
Here are some interesting health benefits of lentils:
-They are a great source of folate (vitamin B9), which makes it a great food for pregnant women.
-They are a great source of fiber, which is great for heart health!
-They are high in iron, which in combination with the vitamin C in the tomatoes we used in this recipe, will be more readily absorbed by the body.
We started off by cooking up some onions in a bit of water. Then, we added the rest of the ingredients (minus the bouillon cube and water) and mixed it all up for about a minute. Next, we covered the lentils in water and popped in the veggie stock cube. Finally, we added a bit of salt and pepper. That's it! Crazy simple.
We always like to enjoy our vegan lentil stew with some rice, quinoa, couscous, or mashed potatoes (dairy free, of course!). However, you can use whatever grain or starchy vegetable you have available in your pantry.

Lentil Stew Recipe
1 cup brown lentils
1 tomato (chopped)
1 carrot (chopped)
1 celery stick (chopped)
1 medium onion (chopped)
1 tsp rosemary
1 tsp thyme
1 bay leaf
1 vegetable bouillon cube ((vegan))
Cook the onions in a little bit of water.
Add the rest of the ingredients and sautée for 1 minute.
Toss in the vegan broth to cover the lentils and simmer until lentils are soft.
Add some salt and pepper to taste. Serve over some rice, quinoa, or couscous, and enjoy!
